Ingredients of Prawn & radicchio sung choi bao

  • 1 radicchio, leaves separated, washed, dried
  • 1 tablespoon oyster sauce
  • 2 teaspoons soy sauce
  • Pinch of caster sugar
  • 2 tablespoons peanut oil
  • 700g medium green prawns, peeled, deveined, roughly chopped
  • 125g bean sprouts, trimmed
  • 75g (1/2 cup) roughly chopped water chestnuts
  • 5 green shallots, ends trimmed, chopped
  • 1 garlic clove, crushed

Steps To Make Prawn & radicchio sung choi bao

Method

  • Step 1
    Place the radicchio leaves, cup-side up, on a large serving plater. Combine the oyster sauce and soy sauce in a small bowl. Taste and season with sugar.
  • Step 2
    Heat the oil in a large wok over high heat until just smoking. Add the prawns and stir-fry for 1 minute. Add the bean sprouts, water chestnuts, green shallots and garlic, and stir-fry for a further 1-2 minutes or until prawns change colour.
  • Step 3
    Make a well in the centre of the prawn mixture and add the oyster sauce mixture. Stir-fry until well combined. Transfer the prawn mixture to a large bowl. Fill each radicchio leaf with prawn mixture and serve immediately.
