  • 1 cup panko bread crumbs
  • 1⁄2 cup all-purpose flour
  • 2 large eggs
  • 2 Tbsp. milk
  • 1⁄4 tsp. kosher salt
  • 1⁄4 tsp. ground black pepper
  • 4 pork loin pieces, pounded to 1⁄2 inch thickness
  • 1⁄2 cup vegetable oil
  • 4 lemon wedges

Steps To Make Japanese Fried Pork (Tonkatsu)


  • Place bread crumbs in a shallow dish, and place flour in another dish. In a small bowl, whisk together eggs and milk.
  • Season pork with salt and pepper. Working in batches, dredge a few pieces of pork in flour, then egg mixture, and finally bread crumbs to coat, shaking off excess between each step. Repeat with remaining pork.
  • Heat oil in a wok on medium-high heat. In batches, slide in 2 pieces of pork and fry until golden brown, approximately 2 to 3 minutes on each side. Remove cutlets from pan and drain on plates lined with paper towels. Repeat with remaining pork. Serve with lemon wedges.
