Ingredients of Stir-fried beef and rice noodles

  • 1 garlic clove, crushed
  • 1 teaspoon sesame oil
  • 400g lean beef fillet steak, thinly sliced diagonally
  • 450g fresh rice noodles (see note)
  • olive oil cooking spray
  • 1 bunch broccolini, trimmed, cut into bite-sized pieces (including stems)
  • 4 green onions, cut into 3cm lengths
  • 1/4 cup thai basil
  • 1/4 cup mild chilli sauce
  • 1 tablespoon reduced-salt soy sauce
  • 150g beansprouts, trimmed

Steps To Make Stir-fried beef and rice noodles

Method

  • Step 1
    Combine garlic and sesame oil in a ceramic dish. Add beef. Toss to coat. Cover. Refrigerate for 10 minutes. Follow packet directions to separate noodles.
  • Step 2
    Heat a wok over high heat until hot. Spray lightly with oil. Add one-quarter of the beef. Stir-fry for 1 minute or until just browned. Remove to a plate. Repeat 3 times with remaining beef and oil if necessary.
  • Step 3
    Spray wok with oil again. Add broccolini and onions. Stir-fry for 2 minutes. Add noodles, chilli sauce and soy sauce. Stir-fry for 2 minutes or until noodles are warmed through. Return beef to wok. Stir-fry for 1 to 2 minutes or until heated through. Add beansprouts. Toss to combine. Serve.
