Ingredients of San choy bau tortillas

  • 2 teaspoons peanut oil
  • 400g pork mince
  • 1 1/2 tablespoons hoisin sauce
  • 1 tablespoon soy sauce
  • 4 soft flour tortillas
  • 3 iceberg lettuce leaves, coarsely shredded
  • 1/2 Lebanese cucumber, thinly sliced
  • 2/3 cup bean sprouts, trimmed
  • 1 green shallot, thinly sliced
  • 1 long fresh red chilli, thinly sliced
  • 1 1/2 tablespoons roasted peanuts

Steps To Make San choy bau tortillas

Method

  • Step 1
    Heat the oil in a wok or large frying pan over high heat until just smoking. Stir-fry mince for 2-3 minutes or until browned. Add sauces and stir-fry for 1-2 minutes or until well combined and thickened.
  • Step 2
    Meanwhile, preheat a chargrill on medium-high. Cook the tortillas for 1 minute each side until lightly charred. Set aside and cover to keep warm.
  • Step 3
    Top tortillas with lettuce, pork mixture, cucumber, bean sprouts, shallot, chilli and peanuts.
