Ingredients of Linguini with Basil and White Clam Sauce
- 1⁄2 lb. linguini
- 2 Tbsp. extra-virgin olive oil
- 1⁄2 small red onion, peeled and minced
- 3 garlic cloves, peeled and minced
- 1 Tbsp. fresh thyme leaves
- 1⁄8 tsp. crushed red pepper
- 1⁄2 cup dry white wine
- 1 1⁄2 cups chicken broth
- 1 can (10 oz.) baby clams separated from the juice, juice reserved
- 2 Tbsp. cornstarch dissolved in 2 Tbsp. cold water
- 1 Tbsp. butter
- 1⁄4 tsp. salt
- 1⁄8 tsp. ground black pepper
- 1 Tbsp. julienned basil
- 1 cup grated Romano cheese
Steps To Make Linguini with Basil and White Clam Sauce
Bring a pot of water to a boil for the pasta. Boil the pasta according to package directions.
Meanwhile, heat the olive oil in a saucepan on medium-high until barely smoking. Add the onion, garlic, thyme, and crushed red pepper. Sauté for about 3 minutes, until the onion begins to soften.
Add the wine and reduce the volume by half.
Add the broth and the juice from the clams. Simmer gently for about 7 minutes, uncovered.
Slowly drizzle the cornstarch slurry into to the simmering sauce, constantly stirring the sauce. Remove from heat and add the clams and butter. Keep warm.
When the pasta is cooked, drain well and toss with the sauce. Season with salt and pepper. Divide the pasta between 2 serving plates, top with basil and serve the cheese at the table to be sprinkled on top.
