Ingredients of Linguini with Basil and White Clam Sauce


  • 1⁄2 lb. linguini
  • 2 Tbsp. extra-virgin olive oil
  • 1⁄2 small red onion, peeled and minced
  • 3 garlic cloves, peeled and minced
  • 1 Tbsp. fresh thyme leaves
  • 1⁄8 tsp. crushed red pepper
  • 1⁄2 cup dry white wine
  • 1 1⁄2 cups chicken broth
  • 1 can (10 oz.) baby clams separated from the juice, juice reserved
  • 2 Tbsp. cornstarch dissolved in 2 Tbsp. cold water
  • 1 Tbsp. butter
  • 1⁄4 tsp. salt
  • 1⁄8 tsp. ground black pepper
  • 1 Tbsp. julienned basil
  • 1 cup grated Romano cheese

Steps To Make Linguini with Basil and White Clam Sauce


  • Bring a pot of water to a boil for the pasta. Boil the pasta according to package directions.
  • Meanwhile, heat the olive oil in a saucepan on medium-high until barely smoking. Add the onion, garlic, thyme, and crushed red pepper. Sauté for about 3 minutes, until the onion begins to soften.
  • Add the wine and reduce the volume by half.
  • Add the broth and the juice from the clams. Simmer gently for about 7 minutes, uncovered.
  • Slowly drizzle the cornstarch slurry into to the simmering sauce, constantly stirring the sauce. Remove from heat and add the clams and butter. Keep warm.
  • When the pasta is cooked, drain well and toss with the sauce. Season with salt and pepper. Divide the pasta between 2 serving plates, top with basil and serve the cheese at the table to be sprinkled on top.
