Ingredients of Lamb stir-fry with spinach & feta

  • 190g (1 cup) couscous
  • 250ml (1 cup) boiling water
  • 1 tablespoon olive oil
  • 400g lamb strips
  • 1 red onion, cut into thin wedges
  • 1 red capsicum, halved, deseeded, cut into 1cm-thick strips
  • 2 garlic cloves, crushed
  • 250g (1 punnet) cherry tomatoes, halved
  • 1 bunch English spinach, trimmed, washed, dried, shredded
  • 1 1/2 tablespoons red wine vinegar
  • 80g reduced-fat feta, crumbled
  • Freshly ground black pepper

Steps To Make Lamb stir-fry with spinach & feta

Method

  • Step 1
    Place the couscous in a medium heatproof bowl and pour boiling water over, while stirring with a fork. Cover with foil and set aside for 2 minutes or until all the liquid is absorbed. Use a fork to separate the grains.
  • Step 2
    Heat 1 teaspoon of the oil in a wok over high heat. Add half the lamb and stir-fry for 1-2 minutes or until browned and just cooked through. Transfer to a plate and cover loosely with foil. Repeat with 1/2 teaspoon of the remaining oil and the remaining lamb.
  • Step 3
    Reduce heat to medium and add 1/2 teaspoon of oil to the wok. Add onion, capsicum and garlic. Stir-fry for 2-3 minutes or until vegetables soften slightly. Add tomatoes and stir-fry for 1 minute. Add spinach, vinegar, lamb and remaining oil. Toss for 1 minute or until the spinach just wilts.
  • Step 4
    Spoon the couscous into serving bowls and top with the lamb and spinach mixture. Sprinkle with the feta and pepper.
