Ingredients of Middle Eastern rissoles with beetroot couscous

  • 500g beef mince
  • 1 egg, lightly beaten
  • 3/4 cup fresh breadcrumbs
  • 1 tablespoon Moroccan seasoning
  • 1/4 cup finely chopped fresh coriander leaves
  • 1 tablespoon olive oil
  • Tamar Valley Greek Style Yoghurt, to serve

Steps To Make Middle Eastern rissoles with beetroot couscous


  • Step 1
    Place mince, egg, breadcrumbs, seasoning and coriander in a bowl. Season with salt and pepper. Mix to combine. Shape mixture into eight 2cm-thick rissoles. Place on a large plate. Refrigerate for 20 minutes, if time permits.
  • Step 2
    Preheat oven to 180°C/160°C fan-forced. Heat oil in a frying pan over medium heat. Cook rissoles, in batches, for 1 to 2 minutes each side or until browned. Transfer to a greased baking tray. Bake for 8 to 10 minutes or until cooked through.
  • Step 3
    Meanwhile, make Beetroot couscous: Drain beetroot on paper towel and pat dry. Place couscous, currants and lemon rind in a heatproof bowl. Place stock in a saucepan. Bring to the boil over medium-high heat. Pour over couscous mixture. Cover. Stand for 5 minutes. Fluff with a fork to separate grains. Add almonds and mint. Season with salt and pepper. Stir to combine. Add beetroot. Toss gently to combine.
  • Step 4
    Divide beetroot couscous between plates. Top with rissoles. Serve with yoghurt.
