Ingredients of Mac ’n’ cheese with ham, leek and crunchy crumbs

  • 250g macaroni
  • 50g butter
  • 1 leek, thinly sliced
  • 2 tablespoons plain flour
  • 560ml (2 1/4 cups) milk
  • 150g Primo English Ham, sliced
  • 20g (1/4 cup) grated parmesan
  • 80g (1 cup) grated vintage cheddar cheese

Steps To Make Mac ’n’ cheese with ham, leek and crunchy crumbs


  • Step 1
    Cook pasta in large pan of boiling water according to packet directions until al dente. Drain.
  • Step 2
    Melt butter in large heavy-based pan over medium heat. Add leek and cook, stirring for 3-4 minutes until softened. Add flour and cook, stirring for 1 minute. Gradually add milk, stirring until smooth. Bring mixture to the boil, reduce heat and simmer for 1 minute.
  • Step 3
    Add ham and season with salt and pepper. Stir in pasta, parmesan and half the cheddar. Cover the surface with plastic wrap to prevent a skin forming and keep warm.
  • Step 4
    Meanwhile, to make crunchy crumbs, heat oil in a medium non-stick frying pan. Add breadcrumbs and cook, stirring over medium-low heat until lightly golden. Add garlic and cook, stirring for 1 minute. Stir through cheese and parsley and season with salt and pepper. Cook for 1 minute. Remove from heat.
  • Step 5
    Stir remaining cheese through mac ’n’ cheese mixture. Spoon into serving bowls and top with crumbs.
