- 2 cups arborio rice
- 6 cups chicken stock
- 1⁄4 cup shredded fontina cheese
- 1⁄4 cup chopped parsley
- 1⁄2 cup cold unsalted butter, cut into pats
Steps To Make Browned Risotto Patties
Preheat the broiler. Lightly grease a baking sheet with 1 tablespoon oil.
Heat the remaining oil over medium heat in a large saucepan. Sauté the onion for about 2 minutes. Add the rice and stir for 2 minutes. Add the stock 1⁄2 cup at a time, stirring frequently and allowing each addition to be completely absorbed before adding the next. Continue until all the stock is absorbed and the rice is tender.
Remove from heat and stir in the cheese and parsley. Let cool, then form into 1⁄2-cup patties.
Place the patties on the prepared baking sheet, place a pat of butter on top of each patty, and brown lightly under the broiler.
