  • 1⁄2 cup cold unsalted butter, cut into pats

Steps To Make Browned Risotto Patties


  • Preheat the broiler. Lightly grease a baking sheet with 1 tablespoon oil.
  • Heat the remaining oil over medium heat in a large saucepan. Sauté the onion for about 2 minutes. Add the rice and stir for 2 minutes. Add the stock 1⁄2 cup at a time, stirring frequently and allowing each addition to be completely absorbed before adding the next. Continue until all the stock is absorbed and the rice is tender.
  • Remove from heat and stir in the cheese and parsley. Let cool, then form into 1⁄2-cup patties.
  • Place the patties on the prepared baking sheet, place a pat of butter on top of each patty, and brown lightly under the broiler.
