Ingredients of Mango & orange toffee with crunch macadamia

  • 110g (1/2 cup) caster sugar
  • 2 tablespoons water
  • 3 oranges
  • 2 small mangoes, peeled, flesh removed
  • 1 35g macadamia & honey bar, roughly chopped

Steps To Make Mango & orange toffee with crunch macadamia


  • Step 1
    Combine sugar and water in a small saucepan. Stir over medium heat for 2-3 minutes or until sugar dissolves. Bring to the boil and boil mixture, uncovered, for 10-12 minutes until just golden.
  • Step 2
    Meanwhile, peel the rind from 1/2 of 1 orange using a vegetable peeler. Remove white pith from the rind and cut the rind into thin strips. (Alternatively, use a zester.) Juice the 1/2 orange and reserve. Peel and slice the remaining 2 1/2 oranges and combine with rind strips in a bowl. Cut mango flesh into thick strips and combine with orange slices and rind in bowl.
  • Step 3
    Remove toffee from heat and add the reserved orange juice, stirring thoroughly to combine. Return mixture to low heat and stir for 1 minute or until smooth. Allow to cool for 5 minutes. Pour syrup over mango and oranges and gently stir to combine. Serve fruit mixture topped with the chopped macadamia & honey bar.
