Ingredients of Mango & orange toffee with crunch macadamia
110g (1/2 cup) caster sugar
2 tablespoons water
2 small mangoes, peeled, flesh removed
1 35g macadamia & honey bar, roughly chopped
Steps To Make Mango & orange toffee with crunch macadamia
Step 1Combine sugar and water in a small saucepan. Stir over medium heat for 2-3 minutes or until sugar dissolves. Bring to the boil and boil mixture, uncovered, for 10-12 minutes until just golden.
Step 2Meanwhile, peel the rind from 1/2 of 1 orange using a vegetable peeler. Remove white pith from the rind and cut the rind into thin strips. (Alternatively, use a zester.) Juice the 1/2 orange and reserve. Peel and slice the remaining 2 1/2 oranges and combine with rind strips in a bowl. Cut mango flesh into thick strips and combine with orange slices and rind in bowl.
Step 3Remove toffee from heat and add the reserved orange juice, stirring thoroughly to combine. Return mixture to low heat and stir for 1 minute or until smooth. Allow to cool for 5 minutes. Pour syrup over mango and oranges and gently stir to combine. Serve fruit mixture topped with the chopped macadamia & honey bar.
