- 3⁄4 cup water
- 1 cup milk
- 1⁄4 cup sugar
- 3 1⁄2 tsp. active dry yeast (2 packages)
- 1 large egg
- 1⁄2 cup (1 stick) unsalted butter, softened
- 1 tsp. kosher salt
- 5 cups bread flour
Steps To Make Cloverleaf Rolls
In a large bowl, combine water, milk, 1 teaspoon sugar, and yeast. Stir to dissolve and let stand until foamy, about 10 minutes.
Add remaining sugar, egg, 1⁄4 cup butter, salt, and enough bread flour to create a firm dough. Add flour only to reduce stickiness. Turn out onto a floured surface and knead 8 minutes. Return to bowl, dust the top with flour, and cover with a damp cloth or plastic wrap. Rise at room temperature until doubled in volume, about 2 hours.
Coat muffin tin with pan spray. Turn risen dough onto a floured surface and shape into a rope, about 1 inch thick. Slice 2-inch pieces, then roll each into a tight ball. Place 3 balls next to each other in each muffin cup, forming a clover. Dust with flour, cover loosely with plastic wrap, and proof for 30 minutes. Preheat oven to 375°F.
Bake until golden brown, about 20 minutes. Melt remaining butter and brush over hot rolls as they come out of the oven. Serve warm.
