  • 1 1/3 cups (200g) self-raising flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon bicarbonate of soda
  • 1 1/2 tablespoons caster sugar
  • 300ml milk
  • 1/2 teaspoon vanilla extract
  • 1 egg
  • 40g unsalted butter, melted, plus extra to brush
  • 400g jar good-quality lemon curd
  • Pinch salt
  • Finely grated zest of 1 lemon
  • 4 white sugar cubes, crushed
  • Whipped cream, to serve

Steps To Make Lemon curd pikelets


  • Step 1
    Place the flour, baking powder, soda and caster sugar in a food processor. Add the milk, vanilla, egg, melted butter, 70g of the lemon curd and a pinch of salt, then process until smooth. Strain into a jug, then stand at room temperature for 30 minutes.
  • Step 2
    Stir together the grated zest and crushed sugar cubes, then set aside.
  • Step 3
    Brush a non-stick frypan with melted butter and place over medium heat. Working in batches, drop 1 tablespoon batter in the pan for each hotcake, spaced 2-3cm apart. Cook for 1-2 minutes until golden underneath, then flip over and cook for a further 1 minute until golden. Keep warm while you cook the remaining pikelets.
  • Step 4
    Stack pikelets on plates, top with extra lemon curd and whipped cream, then sprinkle with the zest mixture.
