1/4 cup (30g) walnut halves, finely chopped
1/2 cup (35g) fresh breadcrumbs (made with day-old Italian-style bread)
200g Italian flat beans, halved lengthways
1 tablespoon lemon juice
100g blue cheese, crumbled
Steps To Make Italian flat beans with blue cheese and walnut crumbs
Step 1Heat the oil in a large frying pan over medium-high heat. Add the walnuts and breadcrumbs and cook, tossing, for 2-3 minutes or until toasted and crisp.
Step 2Cook the beans in a large saucepan of salted boiling water for 2-3 minutes until bright green and tender crisp. Drain well.
Step 3Place the beans on a serving platter and drizzle with lemon juice. Sprinkle with blue cheese and walnut crumbs. Serve immediately.
