  • 2 strips lemon peel (without pith, 2cm x 4cm)
  • 2/3 cup arborio rice or short-grain rice
  • 1/3 cup raisins or sultanas
  • 2 tablespoon caster sugar
  • 1 cinnamon stick
  • 4 cardamom pods

Steps To Make Spiced raisin rice pudding

Method

  • Step 1
    Combine soy milk, cinnamon stick, cardamom pods and lemon peel in a medium saucepan.Bring mixture to a simmer and add the rice and raisins.
  • Step 2
    Stir and cook partially covered over low heat, stirring occasionally for 20-25 mins until the rice is tender and creamy.
  • Step 3
    Add the caster sugar to the pan and stir through.Spoon pudding into bowls to serve.
