2 bunches broccolini, trimmed
3 bunches asparagus, trimmed, halved lengthwise
2 tablespoons olive oil
3 eschalots, thinly sliced
1 baby cos, outer leaves discarded, shredded
1 bunch chives, finely chopped
Steps To Make Sauteed asparagus & broccolini with wilted lettuce
Step 1Bring a large saucepan of salted water to the boil. Add broccolini and cook for 1 minute, then add asparagus and cook for a further 2 minutes or until vegetables are just tender. Drain.
Step 2Meanwhile, heat oil and butter in a large frying pan over medium heat. Add eschalots and cook, stirring, for 4 minutes or until soft. Add broccolini and asparagus, and toss to coat in eschalot mixture. Remove from heat, then add lettuce and chives, season with salt and pepper, and toss mixture together until the heat of the vegetables wilts the lettuce.
