  • 2 parsnips, peeled, trimmed, quartered
  • 2 leeks (white part only), halved, cut into 7cm lengths
  • 2 red apples, cored, each cut into 6 wedges
  • 30g unsalted butter, chopped
  • 1 tablespoon olive oil
  • 8 rashers streaky bacon, rind removed

Steps To Make Roast parsnips, leeks, apples & bacon

Method

  • Step 1
    Preheat the oven to 200°C.
  • Step 2
    Place parsnips, leeks and apples in a baking dish, dot with butter, season with salt and pepper and drizzle with oil. Roast for 15 minutes, then lay bacon on top and roast for a further 10 minutes until vegetables are cooked and bacon is crisp.
