Ingredients of Roast parsnips, leeks, apples & bacon
2 parsnips, peeled, trimmed, quartered
2 leeks (white part only), halved, cut into 7cm lengths
2 red apples, cored, each cut into 6 wedges
30g unsalted butter, chopped
1 tablespoon olive oil
8 rashers streaky bacon, rind removed
Steps To Make Roast parsnips, leeks, apples & bacon
Step 1Preheat the oven to 200°C.
Step 2Place parsnips, leeks and apples in a baking dish, dot with butter, season with salt and pepper and drizzle with oil. Roast for 15 minutes, then lay bacon on top and roast for a further 10 minutes until vegetables are cooked and bacon is crisp.
