Ingredients of Lamb, pea and mint lasagne

  • 700g jar tomato passata
  • 1 tablespoon extra virgin olive oil
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 1/2 teaspoon dried chilli flakes
  • 1/4 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • 500g lamb mince
  • 2 tablespoons tomato paste
  • 1 tablespoon fresh rosemary, finely chopped
  • 1/3 cup chopped fresh mint leaves
  • 9 dried instant lasagne sheets
  • 100g baby rocket
  • 2/3 cup frozen peas
  • 1/4 cup cornflour
  • 2 1/2 cups plain Greek-style yoghurt
  • 1 egg, lightly beaten
  • 1 cup grated mozzarella
  • 2 teaspoons grated lemon zest

Steps To Make Lamb, pea and mint lasagne

Method

  • Step 1
    Preheat oven to 200C/180C fanforced. Spread 1/2 cup passata over the base of a 6cm-deep, 21cm x 32cm (10-cup-capacity) ovenproof dish.
  • Step 2
    Heat oil in a large saucepan over medium-high heat. Cook onion, stirring occasionally, for 5 minutes or until softened. Add garlic, chilli, cinnamon and allspice. Cook, stirring, for 1 minute or until fragrant. Add mince. Cook, breaking up with a wooden spoon, for 5 minutes or until browned. Add tomato paste and remaining passata. Bring to the boil. Reduce heat to medium-low. Simmer for 5 to 7 minutes or until sauce thickens. Stir in rosemary and mint. Season with salt and pepper.
  • Step 3
    Arrange 3 lasagne sheets over passata in prepared dish, trimming to fit. Top with 1/2 the mince mixture, 1/3 of the baby rocket and 1/2 the peas. Repeat layering with the lasagne sheets, remaining mince mixture, 1/2 the remaining rocket and remaining peas. Top with remaining lasagne sheets, trimming to fit.
  • Step 4
    Place cornflour in a bowl. Whisk in 1/2 cup yoghurt until smooth and combined. Whisk in remaining yoghurt and egg. Spread mixture evenly over top of lasagne.
  • Step 5
    Cover dish with greased foil. Bake for 30 minutes. Remove foil. Sprinkle with mozzarella. Bake for a further 15 minutes or until cheese is melted and golden. Stand for 10 minutes. Serve sprinkled with remaining rocket and lemon zest.
