  • 1/4 cup rum
  • 1/3 cup raisins, finely chopped
  • 300g good-quality dark chocolate
  • 1/3 cup thickened cream

Steps To Make Rum and raisin truffles

Method

  • Step 1
    Bring rum and raisins to a simmer in a saucepan over low heat. Remove from heat. Set aside for 30 minutes.
  • Step 2
    Meanwhile, chop 200g of the chocolate. Grate remaining chocolate. Follow step 1 of Basic truffle recipe (see related recipe) using chopped chocolate. Replace vanilla with rum mixture.
  • Step 3
    Follow steps 2 and 3 of Basic truffle recipe (see related recipe), replacing cocoa with grated chocolate.
