  • 1 half baguette, ends trimmed
  • 340g lean chicken mince
  • 2 teaspoons mild curry powder
  • 2 spring onions, trimmed, finely chopped
  • 1 tablespoon chopped fresh continental parsley
  • Olive oil spray
  • 2 light cheddar slices, each cut into 4 triangles
  • 4 small baby cos lettuce leaves
  • 4 pineapple thins in juice, drained
  • 65g (1/4 cup) whole-egg mayonnaise
  • 4 cherry tomatoes

Steps To Make Mini chicken burgers

Method

  • Step 1
    Cut the baguette into 8 slices diagonally. Place on a baking tray.
  • Step 2
    Place the chicken mince, curry powder, spring onions and parsley in a medium bowl. Season with salt and pepper. Use your hands to mix until well combined. Divide into 4 even portions. Use wet hands to shape each portion into a patty.
  • Step 3
    Heat a non-stick frying pan over medium heat. Spray with oil. Cook the patties for 2-3 minutes each side or until golden and cooked through. Arrange 2 cheddar triangles, overlapping, on top of each patty.
  • Step 4
    Preheat grill on high. Toast bread under grill until light golden. Top 1 slice of toast with lettuce, pineapple and a chicken patty, cheddar-side up. Top with mayonnaise and another slice of toast. Thread 1 tomato onto a bamboo skewer and push into the burger to secure. Repeat with remaining toast, patties, mayonnaise and tomatoes.
