Ingredients of Mediterranean veal pockets

  • 6 (about 130g each) veal schnitzels
  • 30g (1 1/2 tablespoons) butter
  • 80ml (1/3 cup) olive oil
  • 3 (about 300g each) telegraph cucumbers, halved lengthways, thinly sliced
  • 2 red onions, halved, thinly sliced
  • 1 cup fresh continental parsley leaves, finely shredded
  • 1 200g jar kalamata olives (Always Fresh brand), pitted
  • 2 tablespoons fresh lemon juice
  • Salt & freshly ground black pepper
  • 6 pocket bread (16cm diameter), halved
  • 140g (1/2 cup) tomato chutney (Young Maid brand)

Steps To Make Mediterranean veal pockets

Method

  • Step 1
    Place a veal schnitzel in a plastic bag and use the flat side of a meat mallet to pound until about 5mm thick. Cut schnitzel in half crossways. Repeat with remaining schnitzels.
  • Step 2
    Heat the butter and 2 tablespoons of the oil in a large non-stick frying pan over medium-high heat. Add 4 pieces of veal and cook for 1-2 minutes each side or until veal is just cooked. Transfer to a plate and cover loosely with foil to keep warm. Repeat with remaining veal.
  • Step 3
    Meanwhile, combine the remaining oil, cucumbers, onions, parsley, olives and lemon juice in a medium bowl. Taste and season with salt and pepper.
  • Step 4
    Place a piece of veal inside each pocket bread half. Top each with some cucumber mixture and 1 tablespoon of the chutney. Wrap in foil and place in an airtight container or bag.
