150g cherry tomatoes
Steps To Make Meatballs with chunky chilli sauce
Step 1To make the chunky chilli sauce, cut the tomatoes into quarters and place into a small saucepan. Add the sweet chilli sauce, fresh chilli, maple syrup and lemon juice. Bring to the boil, then simmer over medium heat for 5 minutes or until the sauce has thickened slightly. Remove from heat. Cool.
Step 2To make the meatballs, combine the onion, garlic, balsamic vinegar and lemon juice in a small saucepan. Cook over medium-low heat for 3-4 minutes or until the onion is soft. Transfer the onion mixture to a medium bowl and add the beef mince, basil, mustard and egg. Mix with your hands until well combined. Shape the meatball mixture into 12 balls.
Step 3Spray a large chargrill or frying pan with the olive oil spray to lightly grease and preheat over high heat. Add the meatballs and cook over high heat, pressing down lightly with a spatula until sealed. Reduce heat to medium and cook, turning occasionally for 8-10 minutes or until cooked through and well browned. Remove from the chargrill or frying pan and cool.
Step 4Thread the meatballs onto 6 of the skewers. Wash the cherry tomatoes and thread onto the remaining skewers.
Step 5Place the meatballs, tomatoes and sauce in separate airtight containers and place in the fridge until required.
Step 6Serve the meatball and tomato skewers with the chunky chilli sauce.
