  • 1 tablespoon olive oil
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 1/2 cups Basmati rice, rinsed
  • 2 1/2 cups reduced-salt fish stock
  • 500g smoked cod
  • 2 tablespoons dill, finely chopped
  • 1 tablespoon lemon juice

Steps To Make Smoked cod and dill rice

Method

  • Step 1
    Heat oil in a large heavy-based saucepan over medium heat. Add onion and garlic. Cook for 5 minutes or until soft. Increase heat to high. Add rice. Cook, stirring, for 1 minute or until rice is lightly toasted.
  • Step 2
    Stir in stock. Bring to the boil. Reduce heat to low. Cover. Cook for 10 minutes.
  • Step 3
    Meanwhile, place fish into a saucepan. Pour over enough water to cover. Bring to a gentle simmer over low heat. Cook for 5 to 10 minutes or until cooked through. Use a large slotted spoon to transfer fish to a plate. Remove skin and any bones. Use a fork to flake fish.
  • Step 4
    Remove rice from heat. Place fish on top of rice. Cover. Stand for 10 minutes. Add dill and lemon juice. Gently stir until just combined. Season with salt and pepper. Serve.
