Ingredients of Poached pears in ginger and cinnamon syrup
215g packet dried pears
375ml ginger beer
1/4 cup caster sugar
1 cinnamon stick
4 slices thick fruit bread, toasted
1/2 cup low-fat Greek-style yoghurt
Steps To Make Poached pears in ginger and cinnamon syrup
Step 1Place pears in a heatproof bowl. Cover with boiling water. Stand for 15 minutes or until pears have softened.
Step 2Combine ginger beer, caster sugar and cinnamon in a saucepan. Place over medium heat. Cook, stirring, for 3 minutes or until sugar dissolves. Reduce heat to low. Simmer, uncovered, for 5 minutes. Add pears. Simmer, uncovered, for a further 15 to 20 minutes or until pears are soft and syrup has reduced. Stand for 30 minutes to cool. Remove cinnamon.
Step 3Place 1 piece of toast in each serving bowl. Top with 2 to 3 pears and drizzle with syrup. Top with a dollop of yoghurt. Serve.
