  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon mixed dried herbs
  • 20g grana padano cheese, from the deli, grated ( 1/4 cup)
  • 30g loose baby spinach leaves
  • 30g loose rocket leaves

    Cook pasta following packet directions. Drain. Toss in a bowl with feta, tomatoes, pine nuts, oil, vinegar, herbs and parmesan. Season. Stir in the spinach and rocket.
