Ingredients of Pinata ice-cream cones

  • 8 mini waffle cones
  • 2 egg whites, at room temperature
  • 100g (1/2 cup) caster sugar
  • 60g dark chocolate, melted, cooled
  • Assorted lollies, for filling
  • 150g dark choc melts, melted
  • Chocolate sprinkles, to decorate

Steps To Make Pinata ice-cream cones


  • Step 1
    Preheat oven to 140C/120C fan forced. Trace circles around the open ends of the cones on a sheet of baking paper, allowing 5cm between each. Place paper, ink-side down, on a large greased baking tray.
  • Step 2
    Use electric beaters to whisk egg whites in a clean dry bowl until soft peaks form. Gradually add the sugar, 1 tablespoon at a time, beating constantly, until the sugar dissolves and the mixture is thick and glossy. Spoon the cooled, melted chocolate over the meringue (do not stir). Use a large metal spoon to transfer the meringue mixture to a piping bag fitted with a 1cm fluted nozzle.
  • Step 3
    Carefully pipe meringue into the circles. Bake for 30 minutes. Reduce the oven temperature to 120C/100C fan forced and bake for a further 30 minutes or until crisp. Transfer to a wire rack to cool completely.
  • Step 4
    Stand each cone upright in a narrow glass and divide lollies among them. Working with one at a time, spread a little melted choc melts over base and slightly up the side of a meringue. Place on a cone, choc-side down. Carefully hold in place for 1-2 minutes or until just set. Spread a little more melted choc around edge of meringue and cone. Sprinkle with sprinkles. Return to glass and repeat with remaining cones, meringues, melted choc and sprinkles. Stand until set.
