Ingredients of Lemon meringue pies

  • Cooking oil spray
  • 8 sheets filo pastry
  • 1 teaspoon finely grated lemon rind
  • 125ml (1/2 cup) fresh lemon juice
  • 60ml (1/4 cup) light thickened cream
  • 2 eggs, lightly whisked
  • 4 egg whites
  • 215g (1 cup) caster sugar
  • Icing sugar mixture, to dust

Steps To Make Lemon meringue pies


  • Step 1
    Preheat oven to 200°C. Spray eight 80ml (1/3-cup) capacity muffin pans with cooking oil spray to lightly grease.
  • Step 2
    Place filo sheets on a clean work surface. Cut filo sheets in half crossways. Place in a stack and cut into quarters to make 64 squares. Trim to make 10cm squares. Spray each filo square with oil. Place 4 squares in the base of a prepared muffin pan, allowing the corners to extend over the edge. Place another 4 squares on top, rotating them slightly to cover the side of the pan. Repeat with the remaining filo and prepared muffin pans. Bake in preheated oven for 10 minutes or until golden brown and crisp. Remove from oven and transfer to a baking tray.
  • Step 3
    Meanwhile, use a fork to whisk together the lemon rind and juice, cream, egg, half the egg whites and half the sugar in a jug until well combined. Pour lemon mixture evenly among filo cases. Bake in oven for 6-8 minutes or until just set.
  • Step 4
    Use an electric beater to whisk the remaining egg whites in a clean, dry bowl until firm peaks form. Gradually add the remaining sugar and whisk until thick and glossy. Spoon the meringue mixture evenly among lemon tarts. Bake in oven for 5 minutes or until light brown. Remove from oven. Set aside for 30 minutes to cool to room temperature. Dust lemon meringue pies with icing sugar to serve.
