Ingredients of Lamb chops with polenta, sun-dried tomatoes and pesto
8 lamb chops, tails trimmed
30g unsalted butter
2/3 cup sun-dried tomatoes
1/2 cup store-bought pesto
2 cups hot Massel chicken style liquid stock
1 1/2 cups instant polenta
Steps To Make Lamb chops with polenta, sun-dried tomatoes and pesto
Step 1Heat a little oil in a non-stick frying pan over high heat. Sprinkle lamb chop with salt and pepper. Add to pan and cook in batches for 2-3 minutes each side or until cooked to your liking. Remove, cover and keep warm.
Step 2Meanwhile, heat stock in a saucepan over medium heat, until simmering. Add polenta and stir until soft and thick. Stir in butter and remove from heat.
Step 3Divide polenta between four serving bowls. Top each with lamb, scatter over sun-dried tomatoes and add a spoonful of pesto.
