Ingredients of Indian spiced chicken with raisin and coriander pilaf

  • 1 teaspoon sweet paprika
  • 1/2 teaspoon hot paprika
  • 1 teaspoon ground cinnamon
  • 260g (1 cup) reduced-fat natural yoghurt
  • 2 1/2 tablespoons fresh lemon juice
  • 2 garlic cloves, crushed
  • 4 (about 250g each) single chicken breast fillets
  • Salt & freshly ground black pepper

Steps To Make Indian spiced chicken with raisin and coriander pilaf

Method

  • Step 1
    Combine the sweet and hot paprika, cinnamon, half the yoghurt, 2 tablespoons of lemon juice and half the garlic in a glass bowl. Add the chicken and turn to coat. Cover with plastic wrap and place in the fridge for 3 hours to develop flavours.
  • Step 2
    To make the raisin pilaf, melt the spread in a large saucepan over medium heat until foaming. Add the onion and cook, stirring, for 5 minutes or until onion softens. Add the rice and stir to coat. Add the stock and bring to the boil. Reduce heat to low and simmer, covered, stirring occasionally, for 25 minutes or until rice is tender and liquid absorbed. Remove from heat. Stir in the raisins and coriander. Taste and season with salt and pepper.
  • Step 3
    Meanwhile, preheat a chargrill pan on high. Add the chicken fillets and cook for 4 minutes each side or until cooked through. Remove from heat. Place on a plate and cover with foil. Set aside for 5 minutes to rest.
  • Step 4
    Combine the remaining yoghurt, lemon juice and garlic in a small bowl. Taste and season with salt and pepper.
  • Step 5
    Spoon the pilaf among serving plates. Top with chicken and dollop with yoghurt sauce. Serve immediately
