1 lemongrass stalk (white part only), halved lengthways
8cm piece fresh ginger, thinly sliced
2 cups fresh mint leaves, torn small fresh mint leaves, to serve
Steps To Make Lemongrass tonic
Step 1Place lemongrass and ginger in a saucepan. Add 6 cups cold water. Bring to the boil over medium-high heat.
Step 2Boil for 3 to 5 minutes. Add torn mint. Boil for 2 minutes or until fragrant. Place mint leaves in a heatproof jug. Strain tonic into jug. Serve.
