  • 2 red capsicums, seeded, quartered
  • 5 roma tomatoes, quartered
  • 2 tbs extra virgin olive oil
  • 1 chorizo sausage, thinly sliced
  • 420g can Heinz Spanish Style Beanz Creationz
  • 120g pkt Coles Australian 4 Leaf Salad
  • 1 small red onion, cut into thin wedges
  • 100g fetta, crumbled
  • Extra virgin olive oil, extra, to serve
  • Lemon wedges, to serve

Steps To Make Warm chorizo and spanish bean salad

Method

  • Step 1
    Preheat oven to 200�C. Line a baking tray with baking paper. Place capsicum and tomato on lined tray. Drizzle with the oil. Season. Bake for 25 mins or until tomato is tender. Thickly slice capsicum.
  • Step 2
    Meanwhile, heat a frying pan over medium heat. Cook the chorizo, turning, for 5 mins or until golden brown. Transfer to a plate lined with paper towel. Reduce heat to low.
  • Step 3
    Add beans and 2 tbs water to the pan. Cook, stirring, for 3 mins or until heated through.
  • Step 4
    Arrange the beans, capsicum, tomato, chorizo, salad leaves and onion on a serving platter. Top with fetta. Drizzle with extra oil and serve with lemon wedges.
