  • 500g frozen broad beans, thawed, peeled
  • 2 tablespoons fresh continental parsley, chopped
  • 2 tablespoons fresh mint, chopped
  • 2 teaspoons lemon rind, finely grated
  • 1 baby treviso lettuce, trimmed, leaves separated
  • 50g baby rocket leaves
  • 1 tablespoon balsamic vinegar
  • 40g marinated feta, drained, crumbled

  • Step 1
    Combine the lemon juice, garlic and olive oil in a shallow glass or ceramic dish. Add the cutlets and turn to coat. Cover and set aside for 30 minutes to marinate.

    Cook the peas and beans in a saucepan of boiling water for 2-3 minutes or until tender. Drain and return to pan. Coarsely mash. Cover and keep warm.
