Ingredients of Roasted eggplant dip
1 medium eggplant
1 small red onion, skin on, cut in half
2 garlic cloves, skin on
1 teaspoon lemon juice
1/4 cup fresh flat-leaf parsley leaves
1/2 cup Tamar Valley Greek Style Yoghurt
Steps To Make Roasted eggplant dip
Step 1Preheat oven to 200°C/180°C fan-forced. Line a baking tray with baking paper. Place eggplant and onion on prepared tray. Roast for 20 minutes. Add garlic. Roast for 10 to 15 minutes or until eggplant is tender. Set aside to cool slightly.
Step 2Cut eggplant in half lengthways. Using a metal spoon, scoop out flesh. Remove and discard skin from onion and garlic. Process eggplant flesh, onion, garlic, lemon juice and parsley until combined. Season with salt and pepper. Transfer to a bowl. Stir in yoghurt. Serve.
