Ingredients of Ricotta, semi-dried tomato & rocket sandwiches
8 slices wholemeal bread
150g semi-dried tomatoes
20g (1/2 bunch) rocket
Salt & ground black pepper, to taste
Steps To Make Ricotta, semi-dried tomato & rocket sandwiches
Step 1Spread the ricotta evenly over one side of each bread slice. Top 4 of the bread slices with the semi-dried tomatoes and then the rocket. Season well with salt and pepper and cover with the remaining bread slices. Cut each sandwich into desired portions. Place on a serving plate, cover with plastic wrap and then a damp tea towel. Keep in the fridge until required.
