  • 2 limes
  • 1 lemon
  • 1 bunch fresh thyme
  • 1 tablespoon black peppercorns
  • 750ml (3 cups) extra-virgin olive oil
  • 2 large fresh red chillies, deseeded, thinly sliced

Steps To Make Lemon, lime, chilli & thyme oil


  • Step 1
    Use a zester to remove the rind from the limes and lemon. (Alternatively, use a vegetable peeler to peel rind. Use a small sharp knife to remove the white pith from rind. Cut rind into thin strips.)
  • Step 2
    Place the thyme in a mortar and pound with a pestle until crushed. Transfer to an airtight container. Place the peppercorns in the mortar and pound with a pestle until crushed. Transfer to container with the thyme. Add lime and lemon rind, oil and chilli and combine. Seal and set aside for 1 week to infuse.
  • Step 3
    Strain the oil through a fine sieve over a bowl. Discard rind, herbs and chilli. Pour the oil into sterilised airtight bottles. Seal. Store in a cool, dark place.
