Ingredients of Spicy semolina dessert

  • 1 lemon
  • 750mls (3 cups) water
  • 440g (2 cups) sugar
  • 1 cinnamon stick
  • 4 whole cloves
  • 125g ghee (clarified butter)
  • 185g (1 cup) semolina
  • 80g pine nuts or chopped blanched almonds
  • 1 teaspoon ground cinnamon, to serves
  • 40g (1/4 cup) silvered almonds, to decorate
  • Thickened cream, to serve

Steps To Make Spicy semolina dessert

Method

  • Step 1
    Line a square 20cm cake pan with non-stick baking paper.
  • Step 2
    Peel the rind from the lemon using a vegetable peeler. Remove any white pith from the rind. Place the rind, water, sugar, cinnamon stick and cloves in a medium saucepan and stir over medium heat until the sugar dissolves. Bring to the boil, reduce the heat to low and simmer for 10 minutes or until slightly syrupy.
  • Step 3
    Meanwhile, melt the ghee in a large saucepan over low heat. Add the semolina and stir constantly with a wooden spoon for 10 minutes or until the mixture becomes golden and crumbly. Stir in the pine nuts or almonds and cook for a further 2 minutes.
  • Step 4
    Strain the syrup and discard the lemon rind, cinnamon stick and cloves. Add the strained syrup to the semolina mixture, stirring constantly (be careful as the mixture will spit). Stir with a wooden spoon over low heat until the syrup has been absorbed and the mixture is thick enough to hold the spoon upright.
  • Step 5
    Immediately pour the mixture into the lined cake pan and smooth the surface. Set aside at room temperature to cool.
  • Step 6
    To serve, turn the dessert onto a serving plate, sprinkle with the ground cinnamon and then decorate with the almonds. Cut into squares and serve with thickened cream.
