  • 2 fresh corncobs, husks and silk removed, kernels separated
  • 5 shallots, trimmed, thinly sliced
  • 410g can cannellini beans, rinsed, drained
  • 250g cherry tomatoes, quartered
  • 2 tablespoons fresh lime juice
  • 125g (1/2 cup) sour cream
  • 1/4 cup fresh coriander leaves, finely chopped
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon red Tabasco pepper sauce
  • 1 tablespoon fresh lime juice, extra
  • 18 cooked large prawns, peeled leaving tails intact
  • Fresh coriander sprigs, to serve

  • Step 1
    Heat the oil in a large non-stick frying pan over medium heat. Add the corn and cook, tossing often, for 4 minutes or until tender. Add the shallot and beans. Cook, stirring, for 2-3 minutes. Transfer to a large bowl. Stir in the tomato and lime juice.
