  • 2 packages lamb shoulder mini roast (about 600g each)
  • 1 tablespoon olive oil
  • 3 teaspoons olive oil, extra
  • 4 garlic cloves, finely chopped
  • 1/2 teaspoon fennel seeds
  • 1/2 teaspoon coriander seeds, coarsely ground
  • 1 lemon, zested, juiced
  • 1 brown onion, sliced
  • 2 cups salt-reduced chicken stock, divided
  • 1 orange, zested, juiced
  • 40g butter
  • 2 teaspoons caster sugar
  • 6 carrots (about 550g total), cut into 3cm pieces
  • 3 small parsnips (about 250g total), cores removed from thick ends, cut into 3cm pieces
  • 1 tablespoon chopped fresh flat-leaf parsley

Steps To Make Lamb shoulder roast with glazed vegetables

Method

  • Step 1
    Preheat oven to 160C (140C fan-forced). Remove string from each piece of meat. Unroll and make a couple of cuts where necessary to open and flatten meat. In a small bowl, mix 1 tbs oil, garlic, fennel seeds, coriander seeds, lemon zest, 1 tsp salt and 1/2 tsp pepper. Spread mixture over each piece of meat. Roll each piece up tightly and secure with cooking string. Rub outside with remaining 3 tsp oil and sprinkle with salt and pepper.
  • Step 2
    Place lamb in a 33cm x 23cm baking dish. Scatter onion around lamb, add 1 1/2 cups stock and cover tightly with foil. Roast for about 2 hours, or until lamb is fork-tender. Remove foil and increase oven temperature to 220°C (200°C). Uncover lamb and roast for 15 mins, or until brown. Set lamb aside on carving board to rest for 10 mins. Strain cooking liquid from baking dish into a tall container and set aside, allowing fat to rise to top. Spoon off fat and keep cooking juices warm.
  • Step 3
    In a large frying pan (about 30cm in diameter) over medium-high heat, bring remaining 1/2 cup stock, orange juice, lemon juice, butter, sugar and 1 1/2 tsp salt to a boil. Add carrots and parsnips and return to a simmer. Cover with a round piece of baking paper (cartouche) and simmer for 10-15 mins, or until vegetables are crisp-tender and liquid has reduced to a glaze. Toss vegetables in glaze and remove from heat. Stir in parsley and 1 tsp orange zest.
  • Step 4
    Remove string from lamb and, using a sharp knife, cut into 3cm-thick slices. Plate lamb with glazed vegetables, drizzle with cooking juices and serve.
