Ingredients of Marsala pork with fennel

  • 2 tablespoons olive oil
  • 2 small fennel bulbs, outer layer removed, thinly sliced
  • 300g baby yellow squash, halved
  • 3 garlic cloves, finely chopped
  • Salt & ground black pepper, to taste
  • 4 (about 120g each) pork scotch steaks
  • 125mls (1/2 cup) marsala
  • 250mls (1 cup) Massel chicken style liquid stock

Steps To Make Marsala pork with fennel


  • Step 1
    Heat 1/2 the olive oil in a large heavy-based saucepan over medium heat. Add the fennel, squash and garlic and cook, stirring occasionally, for 5 minutes. Cover and cook, stirring occasionally, for a further 10 minutes or until the vegetables are just tender. Taste and season with salt and pepper. Cover to keep warm.
  • Step 2
    Meanwhile, heat the remaining olive oil in a large frying pan over medium heat. Add the pork and cook for 4 minutes each side or until just cooked. Remove from the pan, place on a plate and cover loosely with foil. Increase heat to high and add the marsala. Cook, stirring to dislodge any residue from the base of the pan, for 5 minutes or until the marsala has reduced by half.
  • Step 3
    Add the stock and reduce heat to medium-high. Cook for 5-6 minutes or until the liquid has reduced by half. Serve the pork with the vegetables and marsala sauce.
