  • Melted reduced-fat dairy spread, to grease
  • 75g (1/2 cup) plain flour
  • 75g (1/2 cup) self-raising flour
  • 125g (3/4 cup) icing sugar mixture
  • 100g almond meal
  • 5 egg whites
  • 1 x 140g container apple fruit puree
  • 30g reduced-fat dairy spread, melted
  • 2 teaspoons finely grated orange rind
  • 100g fresh raspberries or thawed frozen raspberries
  • Icing sugar mixture, extra, to dust

Steps To Make Low-fat raspberry & orange friands

Method

  • Step 1
    Preheat oven to 200C. Brush ten 125ml (1/2-cup) capacity oval friand pans with melted dairy spread to lightly grease. Place on a baking tray.
  • Step 2
    Sift the combined flours and icing sugar into a large bowl. Stir in the almond meal.
  • Step 3
    Use an electric beater to whisk the egg whites in a clean, dry bowl until soft peaks form. Add half the egg whites, apple puree, melted dairy spread and orange rind to the flour mixture and use a large metal spoon to fold until just combined. Repeat with the remaining egg whites, apple puree, melted dairy spread and orange rind. Gently fold in the raspberries.
  • Step 4
    Spoon mixture evenly among prepared friand pans. Bake in preheated oven for 25 minutes or until a skewer inserted into the centres of the friands comes out clean. Remove from oven. Set aside in the pans for 5 minutes before turning onto a wire rack to cool. Lightly dust with extra icing sugar to serve.
