  • 2 x 7g sachets dried yeast
  • 1 tablespoon caster sugar
  • 1 1/4 cups milk, warmed
  • 4 1/2 cups plain flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon mixed spice
  • 70g butter
  • 1/3 cup SPLENDA® Granular
  • 1/2 teaspoon salt
  • 2 eggs
  • 2 cups sultanas
  • 1/4 cup warmed apricot jam, sieved

Steps To Make Hot cross buns


  • Step 1
    Place yeast, sugar and milk in a large jug (or bowl). Stir until combined and yeast is dissolved. Cover and set aside in a warm place for 10 minutes or until foamy.
  • Step 2
    Sift flour, cinnamon and mixed spice into a large bowl. Using fingertips, rub butter into flour mixture until mixture resembles fine breadcrumbs. Stir in SPLENDA® and salt. Make a well in the centre of flour mixture. Add yeast mixture, eggs and sultanas. Stir to combine.
  • Step 3
    Turn dough onto a lightly floured surface. Knead for 5 minutes or until smooth. Return to a lightly greased bowl. Cover and set aside in a warm place for 1 hour or until doubled in size.
  • Step 4
    Grease a large baking tray. Punch down dough. Turn dough onto a floured surface. Knead for 2 to 3 minutes or until smooth. Form into 15 balls. Place balls, in rows, 1cm apart, on prepared tray. Cover and set aside in a warm place for 45 minutes or until balls double in size. Preheat oven to 200°C/180°C fan-forced.
  • Step 5
    Meanwhile, make flour paste Whisk flour, SPLENDA® and enough water together in a small bowl to form a piping consistency. Spoon mixture into a small snap-lock bag. Snip off 1 corner from bag. Pipe crosses onto buns. Bake for 10 minutes. Reduce oven temperature to 180°C/160°C fan-forced. Bake for 15 minutes or until golden and cooked through. Remove from oven. Brush warm buns with warmed jam. Serve.
