Ingredients of Vegetable korma

  • 1 tablespoon olive oil
  • 1 brown onion, chopped
  • 1/4 cup korma curry paste
  • 2 desiree potatoes, cut into 2cm cubes
  • 600g butternut pumpkin, peeled, seeds removed, cut into 2cm cubes
  • 3 baby eggplant, cut into 1cm-thick slices
  • 2 large tomatoes, roughly chopped
  • 1 cup Massel vegetable liquid stock
  • 160g green beans, topped, cut into 4cm lengths
  • warm roti bread, to serve (see note)

Steps To Make Vegetable korma

Method

  • Step 1
    Heat oil in a large frying pan over medium heat. Add onion. Cook, stirring, for 2 to 3 minutes, or until tender. Add curry paste. Cook, stirring, for 1 minute, or until fragrant.
  • Step 2
    Add potatoes, pumpkin and eggplant. Stir to coat in curry mixture. Add tomatoes and stock. Bring to the boil. Reduce heat to medium-low. Cover and cook for 8 to 10 minutes, or until vegetables are just tender.
  • Step 3
    Add beans. Cook for a further 2 to 3 minutes, or until beans are bright green. Serve with warm roti.
