Ingredients of Red velvet biscuits with white chocolate ganache

  • 125g unsalted butter, at room temperature
  • 215g (1 cup) caster sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 265g (1 3/4 cups) plain flour
  • 30g (1/4 cup) NESTLÉ BAKERS’ CHOICE Cocoa
  • 3 tsp red food colouring
  • 1/2 tsp white vinegar
  • White chocolate curls, to serve

Steps To Make Red velvet biscuits with white chocolate ganache


  • Step 1
    Use electric beaters to beat butter and sugar in a bowl until pale and creamy. Beat in the egg and vanilla. Slowly beat in flour until combined. Add cocoa and beat until combined. Add the food colouring and vinegar and beat until combined.
  • Step 2
    Transfer the mixture to a clean work surface. Knead until smooth. Divide into 2 pieces. Shape each piece into a disc. Enclose in plastic wrap. Place in the freezer for 20 minutes or until firm.
  • Step 3
    Preheat oven to 180C/160C fan forced. Line a baking tray with baking paper. Roll 1 piece of pastry between 2 pieces of baking paper until 3mm thick. Use a 6.5cm-diameter round fluted cutter to cut 8 circles from the pastry. Transfer to prepared tray. Bake for 15 minutes or until just firm. Cool for 5 minutes. Transfer to a wire rack to cool completely. Repeat with remaining dough.
  • Step 4
    For the ganache, place the chocolate in a heatproof bowl. Microwave cream for 1 minute or until simmering. Pour over the chocolate. Stand for 5 minutes. Stir until smooth. Place in the fridge for 20 minutes or until slightly firm. Use a fork to beat until smooth.
  • Step 5
    To assemble, use a piping bag fitted with a 5mm star nozzle to pipe ganache onto 1 biscuit. Continue layering with another 3 biscuits, finishing with ganache. Top with white chocolate curls. Repeat with remaining biscuits and ganache.
