Ingredients of Raspberry and orange trifle slice

  • 85g packet Aeroplane Jelly Raspberry
  • 1 cup boiling water
  • 1/3 cup custard powder
  • 2 teaspoons finely grated orange rind
  • 2 cups milk
  • 1/4 cup caster sugar
  • 1/2 x 450g packet unfilled rectangular double sponge cakes
  • 2 tablespoons orange liqueur (optional, see note 1)
  • 3 oranges, peeled, segmented
  • 125g fresh raspberries
  • Double thick cream, to serve
  • Toasted flaked almonds, to serve

Steps To Make Raspberry and orange trifle slice

Method

  • Step 1
    Place jelly crystals in a heatproof bowl. Add boiling water. Whisk until crystals have dissolved. Stir in 200ml cold water. Cover. Refrigerate for 2 hours or until just beginning to set (it should have a thick, syrupy consistency).
  • Step 2
    Meanwhile, combine custard powder, orange rind and 1/4 cup milk in a saucepan. Whisk until smooth. Pour in remaining milk. Add sugar. Place pan over medium heat. Cook, stirring constantly, for 5 minutes or until custard comes to the boil. Cook, stirring constantly, for 2 minutes. Remove from heat. Cover surface of custard with plastic wrap. Set aside for 15 minutes to cool slightly.
  • Step 3
    Grease a 3cm-deep, 20cm x 30cm lamington pan. Line base and sides with baking paper, extending paper 3cm from edge of pan on all sides. Using a serrated knife, cut cake in half horizontally. Place cake, side by side, in prepared pan, trimming to fit. Drizzle with orange liqueur, if using. Pour warm custard over cake. Cover. Refrigerate for 1 hour or until set.
  • Step 4
    Spoon jelly over custard. Cover. Refrigerate for 4 hours or until jelly is firm. Combine orange segments and raspberries in a bowl. Cut slice into 12 squares. Transfer to plates. Spoon over orange mixture and serve topped with cream and almonds.
