750g Coles Australian No Added Hormones Beef Rump Steak
4 cups (1L) Coles Vietnamese Inspired Beef Pho Stock
1 bunch Asian Pak Choy, quartered
250g rice noodles or 340g pkt Coles Asia Vermicelli Rice Noodles
1/3 cup coriander sprigs
Steps To Make Quick beef pho
Step 1Heat a large non-stick frying pan over high heat. Cook the beef for 2-3 mins each side for medium or until cooked to your liking. Set aside for 5 mins to rest. Thinly slice.
Step 2Meanwhile, place the stock in a large saucepan. Bring to the boil over medium heat. Remove the pan from heat. Add the pak choy. Stir until the pak choy just wilts.
Step 3Prepare the noodles following packet directions. Drain. Divide the noodles among serving bowls. Ladle over the broth and pak choy. Top with the beef. Sprinkle with coriander to serve.
