  • 270g (1 1/4 cups) green split peas
  • 750ml (3 cups) water
  • 2 teaspoons finely grated lemon rind
  • 2 tablespoons fresh lemon juice
  • 2 garlic cloves, crushed
  • 60ml (1/4 cup) extra virgin olive oil
  • Salt & freshly ground black pepper

Steps To Make Lemon & split pea puree

Method

  • Step 1
    Place the peas in a large bowl and cover with plenty of cold water. Set aside for 4 hours to soak. (See microwave tip.)
  • Step 2
    Drain the peas and rinse well. Transfer to a medium saucepan. Add the water and bring to the boil over medium heat. Reduce heat to low and simmer, partially covered, for 25 minutes.
  • Step 3
    Uncover and cook, stirring often, for a further 5 minutes or until all the liquid evaporates. Remove from the heat and set aside for 5 minutes to cool slightly.
  • Step 4
    Place peas, lemon rind, lemon juice and garlic in the bowl of a food processor. Process until almost smooth. With the motor running, add 2 tablespoons of oil in a thin, steady stream and process until mixture is smooth.
  • Step 5
    Transfer the puree to a small saucepan. Taste and season well with salt and pepper. Stir over low heat for 3 minutes or until heated through. Spoon the puree into a serving bowl, drizzle with the remaining oil and sprinkle with pepper. Serve warm.
