- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. cinnamon
- 1⁄8 tsp. cardamom
- 1⁄2 tsp. salt
- 1⁄2 cup brown sugar
- 3 ripe bananas, mashed
- 1⁄4 cup buttermilk
- 1⁄3 cup oil
- 1⁄2 cup sugar
- 1 large egg, beaten
- 1 tsp. vanilla extract
- 12 whole almonds
Steps To Make Banana Almond Muffins
Preheat oven to 375°F. Spray 12 muffin cups with nonstick baking spray containing flour and set aside.
In large bowl, combine flour, almonds, ground oatmeal, baking soda, baking powder, cinnamon, cardamom, and salt. In medium bowl combine brown sugar, mashed bananas, buttermilk, oil, sugar, egg, and vanilla and beat.
Add banana mixture to dry ingredients and mix just until moistened. Divide among muffin cups and top each muffin with a single whole almond.
Bake for 20 minutes or until muffins spring back when lightly touched. Remove to wire rack to cool.
