Ingredients of Zucchini, orange and walnut syrup cake

  • 2 medium (300g total) zucchini, grated
  • 3 teaspoons finely grated orange rind
  • 1/2 cup walnuts, roughly chopped
  • 1 1/2 cups brown sugar
  • 2 cups self-raising flour
  • 1/3 cup plain flour
  • 1/4 teaspoon bicarbonate of soda
  • 1 teaspoon mixed spice
  • 1/2 cup vegetable oil
  • 2 eggs, lightly beaten
  • 1 1/2 cups plain Greek-style yoghurt

Steps To Make Zucchini, orange and walnut syrup cake


  • Step 1
    Preheat oven to 180C/160C fan-forced. Grease a 9cm-deep, 11.5cm x 20cm (base) loaf pan. Line base and sides with 2 layers of baking paper, extending paper 2cm above edges of pan.
  • Step 2
    Combine zucchini, grated orange rind, walnuts, sugar, self-raising flour, plain flour, bicarbonate of soda and mixed spice in a large bowl. Make a well.
  • Step 3
    Whisk oil, egg and 1/2 cup yoghurt together in a jug. Add to zucchini mixture. Mix well to combine. Pour mixture into prepared pan. Bake for 1 hour 10 minutes or until a skewer inserted into the centre of cake comes out clean.
  • Step 4
    Meanwhile, make honey syrup. Place honey, orange juice, cinnamon and 1/3 cup of water in a saucepan over high heat. Bring to the boil. Reduce heat to low. Simmer for 5 minutes. Remove from heat. Stir in orange zest.
  • Step 5
    Carefully pour 1/2 the hot syrup over the hot cake. Stand for 30 minutes to allow syrup to completely soak into cake. Carefully lift cake onto a wire rack lined with baking paper. Set aside to cool. Serve cake warm or cold with remaining yoghurt and drizzled with the remaining syrup.
