Ingredients of Sweet and savoury nut bar

  • 100ml maple syrup
  • 20g butter, chopped
  • 1 1/2 tablespoons almond butter
  • 2 cups puffed rice
  • 1/2 cup pepitas
  • 2 tablespoons chia seeds
  • 2 tablespoons LSA meal
  • 1/4 teaspoon salt
  • 1/2 cup pine nuts
  • 2 tablespoons flaked almonds
  • 2 teaspoons ras el hanout (see Note)

Steps To Make Sweet and savoury nut bar

Method

  • Step 1
    Grease and line base and sides of a 16cm x 26cm baking pan with baking paper.
  • Step 2
    Place maple syrup, butter and almond butter in a small saucepan over low heat. Cook, stirring, until combined.
  • Step 3
    Meanwhile, combine puffed rice, pepitas, chia seeds, LSA meal and salt in a large bowl.
  • Step 4
    Heat a large frying pan over medium heat. Cook pine nuts, tossing, for 3-4 minutes or until golden. Transfer to rice mixture. Cook almond in same pan for 1-2 minutes or until golden. Transfer to rice mixture. Cook ras el hanout for 30 seconds or until fragrant. Transfer to rice mixture along with maple syrup mixture. Toss well to coat and spoon into prepared pan. Press down well and flatten surface. Stand for 1 hour. Cut into 20 pieces while still in the pan (see note).
  • Step 5
    Preheat oven to 160C or 140C fan-forced. Bake for 20 minutes or until golden. Cool in pan. Cut along precut lines and store in an airtight container.
