Ingredients of Macadamia tartlets

  • 185g butternut snap biscuits
  • 80g butter, melted
  • 1 cup (150g) unsalted macadamia nuts
  • 2/3 cup firmly packed brown sugar
  • 1 tablespoon cornflour
  • 2 tablespoons pure cream
  • 2 eggs, lightly beaten
  • 1 teaspoon finely grated orange rind
  • Icing sugar mixture, to dust

Steps To Make Macadamia tartlets


  • Step 1
    Preheat oven to 160°C/140°C fan-forced. Grease six 2cm-deep, 10cm (top) round, fluted, loose-based flan tins.
  • Step 2
    Process biscuits until they resemble fine breadcrumbs. Add 2 1/2 tablespoons butter. Process until just combined. Divide biscuit mixture between tins. Using the back of a spoon, press down firmly to line base and side of tins. Place on a baking tray. Refrigerate for 20 minutes.
  • Step 3
    Place macadamias in biscuit bases. Place sugar, cornflour, cream, eggs, orange rind and remaining melted butter in a bowl. Whisk until smooth. Pour sugar mixture over macadamias. Bake tartlets for 20 minutes or until just set. Cool. Refrigerate for 30 minutes or until chilled. Serve dusted with icing sugar.
