Ingredients of Lime & chilli kumara chips
Rice bran oil, to deep-fry
2 small (195g each) orange sweet potatoes (kumara), peeled lengthways into ribbons
1 teaspoon sea salt flakes
1 teaspoon finely grated lime rind
Large pinch of chilli powder
Steps To Make Lime & chilli kumara chips
Step 1Add enough oil to a large saucepan to reach a depth of 2cm. Heat to 180°C over high heat (when oil is ready a cube of bread will turn golden brown in 15 seconds).
Step 2Add one-sixth of kumara and deep-fry for 1-2 minutes or until crisp. Transfer to a plate lined with paper towel. Repeat, in 5 more batches, with remaining kumara.
Step 3Combine salt, lime rind and chilli powder in a bowl. Sprinkle kumara with salt mixture.
